
Pollock skin contains a lot of collagen and so it is popular for the nutritional benefits. Pollock skin can be used for making broths, deep-fried (made crispy in oil), or stir-fried into a side dish. Pollock skin can burn so you need to be careful while cooking it.
When using it to make broth, you need to prep it by washing it lightly in cold water; some say you do not even need to wash it. Broth made with pollock skin has a clean flavor and can be used as a base for kimchi sauce and soups. You can simmer pollock skin for a longer time without your broth getting bitter.
When using it for a side dish, you need to remove the fins or hard section along the side of the skin. You can do this by cutting them off with scissors. Make sure to save those pieces and use them for broth later.
