
Pollock heads are used for making broth. Before being used, you need to prepare them by removing the gills on the inside of the head. You can also purchase pre-cleaned pollock heads at Korean markets. You need to remove the gills so that your broth does not have a bitter flavor. After removing the gills, it is important that you wash your pollock heads in cold water.
You only want to simmer pollock heads for a max of 30 minutes. You can combine pollock heads with other broth ingredients like green onion, radish, or dried anchovy to achieve a deeper flavor that can elevate your Korean dishes.
