
Dried Large eyed herring (밴댕이) is a type of dried fish. Based on the area in Korea it is called different names like: “디포리” or “보리멸”. This dried fish is used whole.
This dried fish does not keep well so store them in the freezer for 1 month and the fridge for 1 week. Before using, put the fish in an un-oiled pan on low heat and toast lightly to remove the natural fish smell. You do not need to remove the head or guts before using.
Dried large eyed herring are usually used to make broth and can add a deep and slightly sweet flavor. This fish can also help with digestion when used to make broth.
