All of the vegetables for fried rice should be cut into small diced or minced/sliced if they are aromatic vegetables.
- Green Onion (파/대파): Green onion is sliced thinly or minced and added to make a flavored oil. You can use the white part of the green onion when making a flavored oil or for aromatic purposes because it is more aromatic. You can slice the green section and use it as a garnish at the end of the cooking process. Green onion is very important for the flavor of fried rice.
- Garlic (마늘): You can use minced garlic to make a flavored oil. It is important to add garlic for the flavor of fried rice. You can also use garlic powder.
- Spicy Pepper (청양고추): You can add sliced or minced spicy pepper to make a flavored oil.
- Yellow or White Onion (양파): When you add onion, you want only to add a small amount of small diced onion because it releases a decent amount of water as it cooks, and too much can make your fried rice soggy. You can also add onion powder.
- Carrots (당근): Carrots can be small diced and used to make fried rice. They add flavor, color, and texture. You would add carrots depending on the recipe.
- Green Peas (완두): Peas can be added depending on the recipe. They add a nice green color, flavor, and texture.
- Corn (옥수수): Corn can be added depending on the recipe. Like other vegetables, it adds color, flavor, and texture.
- Kimchi (백김치/배추김치/깍두기): You can use white kimchi, red cabbage kimchi, and even radish kimchi when making fried rice. I bet green onion kimchi would be delicious as well. No matter the kind of kimchi you use you need to use the sour version of that kimchi. Sour kimchi is made “sour” by being left at room temperature in a cool dark area for 3 days. It is important to use sour kimchi because it gives a better flavor. I also recommend using the base part of the cabbage when making fried rice because it holds its structure better and will therefore give a better texture to your kimchi fried rice. Another important note is that you want to small dice your kimchi and remove excess liquid from your kimchi before adding it to the wok. Finally, you will need to balance your kimchi fried rice flavor by adding some sugar to the fried rice. You may also need to add some salt or soy sauce, depending on how salty your kimchi is. Taste the fried mixture before adding salt just to be safe.
