- You want to use cold water when making your matter. Otherwise, gluten can form. You can also let the ingredients and batter get really cold in the fridge before frying as well for a crispy texture. Remember that some batter does not store well, so keep that in mind and maybe opt to use very cold water instead of chilling it in the fridge for too long.
- Adding eggs to your batter makes the ingredients retain moisture and adds color. Egg whites can make your batter crispier.
- Baking powder and seltzer water can give a light texture to your batter.
- You can add cooking alcohol like Mirin (미림) and soju (소주) to your batter. When the alcohol burns off in the hot oil, it will give you a crispy texture.
