Seaweed broth enhances umami without overpowering the dish as anchovy broth would. If you don’t have either, use water. If you are making a chicken porridge, then you can use chicken-based broth.
Savory Porridge Seasoning:
When you season savory porridge you can use salt, fish sauce, or soup soy sauce (국간장). You want to season your porridge with ingredients that will not change the color of the porridge.
Savory Porridge: Garnish
You can garnish your savory porridge with different toppings. Some examples are toasted crushed sesame seeds or sesame seed salt, dried crushed seasoned seaweed (맛김), sesame oil, and or green onion.
