“압면” is a type of noodle that is made by a dough being pressed into a machine with holes that make long noodle strands right into a pot of boiling water. I refer to these noodles as pressed noodles for that reason.
Usually, these kinds of noodles were made through this pressing method because the ingredients used to make the noodles had low elasticity, and so the best way to make them into a noodle shape was to press them in a machine and boil them right away so that they do no stick or misshape. The ingredients used to make these noodles were usually starch, corn, and rice. An example of pressed noodles is sweet potato starch noodles (당면).
