Rice water 속쌀뜨물 (sokssaltteumul) is used for various cooking reasons.
- Rice water can be used when braising dishes to add extra nutrients.
- It can also be used as water to blanch vegetables to help retain the vegetables nutrients.
- Rice water can be used when soaking dried ingredients to remove the strong, unwanted smell that some dried vegetables and dried greens have.
- It is used as a base for soups as a substitute for broth because it adds nutrients and deepens the flavor.
- It can also be used to remove unwanted smells from meat or fish.
How to Make Korean Rice Water (속쌀뜨물)
Instructions
- Make rice water when you are preparing rice to cook.
- First put your rice into a bowl and add cold water.
- Now gently swish the rice around 2-3 times. When you are washing your rice it should not be too rough like you are grabbing the rice, just do it gently, then strain out that water.
- Do this again for a second time and then dump out the water.
- On the third wash, you can save the water that you pour off the rice. This batch of water is called Soksaldemul “속쌀뜨물” and can be saved and used for cooking. Store it in the fridge for 3-4 days or in the freezer.
