Plating:
When serving raw beef, the temperature of everything should be as cold as possible. The beef should be cold, the plate should be chilled in the fridge, and the fresh garnish should be cold.
Garnish/Serving:
- First, place chilled sliced strips of pear or chestnuts onto the plate.
- Then place the chilled seasoned beef onto the pile of fresh-cut pears. Try to get some height while plating, don’t smash down the beef.
- Thirdly, place an egg yolk into the center of the pile of beef (one per person).
- Finally, garnish with green onion, nuts, and seeds.
How to Eat:
Serve the raw beef with different leafy greens so you can make a wrap. Then when you are ready to eat, mix the beef with the egg yolk and fresh pear or chestnut. To fully enjoy the textures and flavor, try to get a little of each seasoning ingredient on your chopstick when you eat it. Make sure you have a little bit of sliced pear with each bite of raw beef.
