After you make your dough and let it rest in the fridge, you should roll it out into noodles immediately. Otherwise, you can place it into the freezer and use it ideally within a month.
When you want to defrost your dough, place it in the fridge and let it defrost in the fridge. Do not defrost your dough at room temp.
If you make fresh noodles from the dough, you can store them in the fridge for up to 3 days. You can also store them in the freezer. If you store them in the freezer, use them within 10 days or store them for as long as a month.
