Storing Cooked Stir-fried Dishes
Storing stir-fried foods is very simple. Stir-fried dishes are considered “ready-to-eat” foods. These foods can last a week in the fridge when stored in an airtight container. Keep in mind that as the days go by, the texture will change, so although it’s safe to eat your stir-fried dish for up to a week, try and eat within 3-4 days.
How to Reheat & Restore Stir-fried Dishes
When you are ready to use your leftover stir-fried foods, the best way to reheat them is in a wok or pan. Reheating in a pan compared to a microwave makes it possible to thicken any liquid that had come off the ingredients and season more if necessary.
Simply take your stir-fried dish and add it to a hot oiled wok and mix it continuously until it is heated completely.
If your stir-fried dish is kind of watery since you last made it, then first add it to a hot wok and stir continuously. If the stir-fried dish is red pepper paste (고추장) based and has excess liquid in the container that came off naturally from the ingredients as they sat in the container, then you can add some more red pepper paste or a slurry to re-thicken the sauce. You may need to taste and add more salt as you reheat your dish.
If your stir-fried dish tastes bland after a few days, you can stir fry sour or aged/mature Kimchi first, then add the old stir-fried dish to the wok to reheat it. This can add some flavor back to your stir-fried dish.
The best way to serve leftover stir-fried foods is with rice as a 덮밥. You can further enhance your dish by adding a fried egg, crushed sesame seeds, sesame oil, and or dried seaweed.
