Saenchae (생채) is the preparation method that uses fresh vegetables or ingredients that are then seasoned with a sauce.
You need to prepare and clean the fresh vegetables thoroughly before using them since you eat them raw. Some vegetables may need to be salted or soaked before the sauce is added to improve the texture.

- Korean Dandelion (민들레)
- Cucumber (오이)
- Short-Fruit Pimpinella (참나물)
- Acorn Jelly (도토리묵)
- Spring Cabbage (봄동)
- Water Dropwort (미나리)
- Bell Flower Root (도라지)
- Stringy Stonecrop (돌나물)
- Blue Seaweed (파래김)
- Korean Radish (무)
- Bokchoy (청경채)
- Garlic Chive (부추)
- Korean Wild Chive (달래)
- Dried Radish (무말랭이)
