Currently, cows are raised in more controlled environments, which provide vaccines and impose strict guidelines on how the cow is raised and slaughtered. Thanks to these advances in meat production, it is safer to eat beef that is raw or undercooked. Keep in mind that there is always a chance of food-borne illness if meat is not cooked all the way. As long as the beef is handled and stored correctly after being processed, it should be safe to eat.
Remember, the term “회” did not always refer to raw beef or fish; originally, it referred to a mixed dish. If you were wondering how Korean people in the past ate raw beef, it was less common because it wasn’t as safe.
