
Eggplant pepper is black on the outside and green on the inside. It is not spicy and has a mild, sweet flavor and crisp texture. It can be eaten raw or cooked.
Eggplant pepper can be eaten raw with sauce for Korean BBQ, grilled with meat for Korean BBQ, seasoned and stir-fried as a side dish, seasoned raw with soybean paste as a side dish, added to water kimchi for color, or steamed and seasoned with a sauce.
