
Dried squash is made with Korean squash. When dried, it has a slightly sweet flavor and chewy texture. When made at home, it is sliced and dried in the sun on a tray with holes.
Before using dried squash, you need to prepare it. Soak it in warm water/rice water for 45 minutes, then strain the liquid from the squash with a sieve. Touch the squash with your fingers to make sure there isn’t any hard pieces. Once rehydrated, you can use this squash in braised/stir-fried side dishes. It is better to do the stir-fry/braised combination when cooking this dried vegetable so that it softens all the way through and has a good texture. You can braise/steam it while stir-frying by adding water or broth to your pan along with your other seasoning ingredients and covering it with a lid for a few minutes until the liquid is absorbed.
