Why Dry Seafood?
Seafood can be salted or dried to extend its shelf life. Besides the benefits of long-term storage, drying seafood can give seafood a deeper flavor and a different texture. Salting seafood can enhance the delicate sea flavor of the seafood.
Buying Dried Seafood
Salted and dried seafood should have an attractive color and pleasant odor. Do not buy dried seafood if it has an odd odor. Finally, always check to see if your dried seafood is pre-salted or not before using it in your recipe.
Storing & Using Dried Seafood
The ideal place to store most dried seafood is in an airtight bag in the freezer. It is best to use dried seafood within 6 months of storing it in the freezer.
Before using dried seafood, it is important to wash it very well in cold water and scrub it using a clean food brush. Some dried seafood like dried shredded pollock (북어채) should be soaked before it is used.
