Porridge can be broken down into three categories: white, vegetable, and protein.
- White porridge is a porridge made with a liquid and rice. The liquids can be milk or water.
- Vegetable porridge can contain various seasonal or local vegetables such as seaweeds, mushrooms, or squash.
- Protein porridge can contain different proteins like chicken, abalone, fish, or oyster. For simplicity’s sake, I will include nut and bean porridge under protein porridge since it does provide proteins and healthy fats.
There are other terms that refer to porridge in Korean cuisine. Some refer to a very thin or finely blended version, but I will focus on the version “죽.”
