Remember that the cooking time varies based on the thickness and ingredients used to make noodles. Make sure you check your noodles as they cook to make sure they are at the doneness that you want.
The following boiling times are all based on adding noodles to water that is already boiling. So, ensure that when you add your noodles, the water is always boiling.
- Sweet potato noodles (당면) take a long time to boil unless you soak them in water first. You can soak them in hot water for 1 hour or cold water for 2 hours. After soaking, they only take about 3 minutes to cook. They should be completely soft; there is no al dente when making sweet potato noodles.
- Hand-pulled noodles (수제비) are noodles that are pulled from a lump of dough and added right into the soup to cook. You don’t need to boil these in a separate pot and add them to the soup later; just cook them directly in the soup. They take about 3-5 minutes to cook in the soup so add them at the end of your soup-making process.
- Knife-cut noodles can also be added directly to the soup or boiled on the side and then added. They take about 5 minutes to cook.
- Buckwheat noodles can vary a little based on the thickness, but thin buckwheat noodles take 3-3.5 minutes to cook.
- Somyeon (소면) takes about 4 minutes to boil till tender. As you boil these noodles, add some cold water to the boiling water and continue to let them cook, this will result in a better texture.
