
Young radish is a type of radish with very small roots and luscious tender leaves. The main part of this ingredient that is used is the leaves and stem. The leaves of this radish have a mild flavor.
If you plan to grow this ingredient yourself then keep in mind that young radish is harvested before the roots become very large. If the roots and stems are left to grow for too long they get tough and fibrous. The roots should be quite small and if they are on the larger side they should be cut in half before being used.
Young radish is often used to make kimchi (Ex. white, spicy/red kimchi, or water kimchi) or seasoned as a side dish (나물). The kimchi made from this radish can be used in cold noodle dishes.
