Napa cabbage has a mild flavor. It has a firm crisp base and tender leaves. When cooked it has a milky savory flavor.
Napa cabbage is often used to make kimchi. It can also be seasoned raw, made into pancakes, blanched and seasoned as a side dish, blanched and used as a wrap for Korean BBQ, added to soups, or used in stir-fried dishes.
When prepping this cabbage make sure to wash it very well. You can soak this cabbage shortly in water or vinegar water to remove dirt from inside the leaves. The inner leaves of this cabbage are firm and crisp. Al-bae-chu (알배추) is the name for the inside leaves of Napa cabbage. You can buy these pre-packaged and sold separately from the cabbage in store.
