What does this mean?
I have discussed a variety of kimchi, but for your reference, I refer to red pepper-based kimchi as regular kimchi. This is the kimchi you probably see most often. It is most popularly made from cabbage and fermented with a red pepper-based paste.
Tools Needed to Make Kimchi
Before we get into the steps breakdown, let’s talk about some tools you need to make kimchi. I will cover 5 main things you need.
Large Bowl:
You will need a large bowl to wash and brine your cabbage. It should be large enough to submerge your cabbage fully.
Gloves:
Second, you will want to wear gloves when applying the sauce. This is optional, but the red pepper seasoning paste can irritate your skin, so use caution.
Cutting Board & Knife:
Third, you will need a cutting board and knife. Make sure your knife is sharpened and ready to go.
Container:
Fourth, have the container you plan to use for storage prepped and sanitized. Doing this early will allow time for it to air dry completely.
Colander:
Finally, you will need a colander or wicker basket to let the cabbage fully drain of all water after you brine and wash the cabbage.
