Soy Pickled (장아찌) is a pickled food side dish that is made by pouring a mixture of soy sauce, water, sugar, and vinegar onto an ingredient. After some time of resting at room temperature the liquid is then drained from the ingredients, only the liquid is re-boiled, cooled, and then poured over the ingredients again before being placed in the fridge. This method was used for preserving food. Pickling enriches the flavor of vegetables and adds a crunchy texture and savory taste.
There are pickled side dishes that use only salt or sugar to pickle but I will focus on soy-based pickled foods in this section. Pickled foods go well with greasy or heavy foods such as grilled meats or pasta. It also accompanies scorched rice (누룽지) well. You will find this pickled dish very often on the table.
