
These noodles are usually made from sweet potato or pea starch. They are clear, chewy, elastic noodles. Keep in mind that they absorb a lot of water and flavor when cooked so if you are not careful the noodles can absorb all the liquid in your dish. These noodles are used in side dishes, steamed dishes, soups, and or in dumplings.
Before using, soak the noodles in cold water for 1-2 hours. If you skip this step and just want to cook the noodles it will take longer than your average noodle, so just watch them and remove them once they are soft enough to bite.
Store these noodles in a cool dry area.
