Soju is a distilled alcohol with 16.9% alcohol content. It is not often used to add flavor to your food and does not usually contain additives like sugar or msg. (I am referring to plain soju not fruit flavored etc.)
Soju’s high alcohol content makes it useful for removing unwanted smells, tenderizing ingredients, adding crispiness to batters, extending shelf life, and maintaining the texture of proteins. It does not require refrigeration after opening.
