Shepherd’s purse has edible stems, leaves, and roots. It has a unique savory flavor similar to an artichoke. It is known to be good for blood and liver health. When these vegetables are harvested, they are harvested when the roots are still tender and small.
Before using this root in your recipes, remove any dead or yellow leaves and throw them away. Then soak the ingredient in vinegar water to clean all the dirt from the roots and leaves. It is very important that you wash this vegetable multiple times until there is no dirt or small rocks, wash this vegetable 3-4 times very well. Optionally, you can use a knife and scrape any leftover dirt gently from the surface of the roots after cleaning.
Shepherd’s purse can be used in soups, deep-fried, or seasoned to make side dishes.
