
Ramps have edible leaves and stems. The leaves are strong, flat and have a garlic/onion flavor.
Ramps can be eaten fresh as a wrap for Korean BBQ, made into kimchi, used for rice wraps, soy pickled, deep-fried, seasoned as a side dish, made into pancakes, or used in rolled egg.
If you do not have ramps, garlic scapes or garlic chives can act as a similar flavor substitute depending on the recipe you are making.
